Boston was only supposed to be a temporary rendezvous point for the Mr. and I. The world headquarters for the multinational company the two of us have spent the majority of our adult lives dedicated to is located in Ohio.  Because of this, the plan had always been for us to return back to the house we lovingly built in Cincinnati once our assignment in Kenya was complete.   I would continue to work as a scientist in the Beauty Category and the Mr. would move on to another Marketing assignment.

But things never seem to go as planned and instead the company diverted us to Boston where I had no choice but to work on a new brand that I had little interest or passion for.  After 11 months of trying to make it work, I finally decided that the time was right for me to leave Corporate and explore other passions that I never seemed to have time for while working endless hours for Corporate.  And since the plan was for the Mr. to ultimately be sent back to Ohio, it frankly did not make sense for me to explore careers with other companies in the Boston area.

But plans are just that and are meant to change.

 

The Mr. made the hard decision that it was high time that he continue to expand his skill base beyond what Corporate had taught him.  As such, he too quit the company he spent the last 21 years devoted to and accepted a new job here in Boston.

 

So as much as I have been in denial, it looks like Boston will now officially serve as our home base.  But all is not thunderclouds and epic snowstorms.  There are some exciting bits associated with settling down in this coastal city.   For example we now have a better inkling of what the near term future looks like so I can come up with a more concrete plan for myself (when the time is right, of course).  We can also transition from being renters back to home owners.

 

Now you know why I have been missing in action as of late.  We have been busy looking for a new home in this highly competitive, highly expensive Boston housing market (did you know that Boston is the 3rd most overpriced city in the U.S.?  Read the Forbes article HERE).  I hope to bring you an update on this in my next post.  Fingers crossed that all goes smoothly.

In honor of us once again becoming homeowners, I decided to bring you this Buttery Apple Cake with Basil Cream Cheese Frosting because nothing says home more than a juicy apple pie or some other apple dessert.

This cake could easily work with one tier;  however, I wanted to add a bit of drama, so I stacked two tiers together, hugging each with a fluffy layer of basil cream cheese frosting.  And of course, what’s a cake without accessories?  I topped this already dreamy cake with a pile of homemade apple chips.  Not only are these chips a beautiful way to elevate your desserts, they are also a tasty snack in their own right.

P.S.  I have yet to find basil extract at my local grocery stores.  If you are unlucky like me, you can find the basil extract that I used HERE.

BUILDING BLOCKS
For the APPLE CHIPS:
  • 2 firm tart apples (I used Pink Lady)
  • pineapple juice
  • ground cinnamon
For the APPLE TOPPING:
  • 2 tbsp unsalted butter
  • 4 firm, tart apples (2 lbs) (I used Pink Lady)
  • 2 tbsp granulated sugar
For the CAKE (see note):
  • 1 1/3 cup flour + extra for cake pan
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 10 tbsp unsalted butter + extra for cake pan
  • 3 large eggs
For the BASIL CREAM CHEESE FROSTING:
  • 2 ounces white chocolate
  • 8 ounces cream cheese
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract
  • 1 1/2 tsp basil extract
  • 4 cups powdered (confectioners) sugar
THE COURSE
For the APPLE CHIPS:
  1. Preheat oven to 225° F.

  2. Add enough pineapple juice to a bowl or baking pan so that it covers the apple chips (I used a 13 x 9 inch glass baking dish).

  3. Cut very thin apple slices (about 1/8 inch). You can use a mandolin, if you have one but it is not necessary (I didn't use one). I think the peel & core make the chips look beautiful so I recommend leaving them as Mother Nature intended.

  4. Arrange apple slices in a single layer on baking sheets lined with parchment paper.

  5. Sprinkle cinnamon on top of the slices.
  6. Bake for 90 minutes, then flip the apple slices & bake for an additional 90 minutes. The apple slices should be crisp & golden. If your apple slices are a bit thicker, then you may find that they need additional baking time. Note:  Apple slices will crisp further once cooled.

For the APPLE TOPPING:
  1. Peel, core & slice the apples into 1/2 inch slices.  

  2. Melt the butter over medium heat in a large pan. 
  3. Add the apples to the pan & sprinkle the sugar on top. Cook for 10-12 minutes, stirring occasionally. The apples are ready when they are golden brown.

For the CAKE:
  1. Preheat oven to 350° F.

  2. Prepare pan by buttering & flouring it. I also placed a parchment paper round on the bottom on my pan as extra insurance.

  3. Arrange half of the apples in a single layer on the bottom of the pan.

  4. Zest the lemon &, in a large bowl, combine the zest with the flour, sugar, baking powder, & salt.

  5. Melt the butter & add it to the flour mixture. Whisk in the eggs. The batter should be smooth.

  6. Pour half of the batter over top the apples in the cake pan.

  7. Place a second layer of cooked apples on top of the batter.

  8. Pour remaining cake batter over top the apples. You may need to use a spatula to spread the batter out.

  9. Bake the cake until it is golden and a toothpick inserted in the center comes out clean (about 40- 50 minutes).

  10. Cool the cake slightly on a wire rack, then remove the cake from the pan & cool completely on the rack.

  11. Frost with Basil Cream Cheese Frosting and decorate with Apple Chips.
For the BASIL CREAM CHEESE FROSTING:
  1. Remove the butter & cream cheese from the refrigerator.  You want it to be at room temperature when you start whipping it.

  2. Place the white chocolate in a bowl & melt in 30 second increments in the microwave.

  3. Vigorously stir the chocolate after each of these increments.

  4. Continue to microwave until the chocolate becomes glossy and smooth.

  5. Allow the chocolate to cool to room temperature.

  6. Place the cream cheese and butter in a large bowl. With a electric mixer whip the butter & cream cheese until they are smooth and well incorporated.

  7. Mix in the white chocolate, vanilla & basil extract until combined.

  8. Slowly beat in the powdered sugar until the frosting is nice & fluffy.

  9. Frost your cake. This recipe should easily accommodate a two tiered cake plus extra for licking off the beaters or frosting mini cakes.
Recipe Notes

Note:  I made two nine inch cakes.  You will need to double the cake recipe if you desire a 2 layer cake as pictured.
